Ingredients

2/3 c. sugar (save 2 Tbsp.)
2 Tbsp. cornstarch
1 egg plus 2 yolks
1/4 stick butter
2 c. milk
1 tsp. vanilla
1 c. coconut
2 egg whites
1 pie crust shell
Preparation

Mix first 5 ingredients. Cook in a double boiler until thick. Stir continually. Add next 2 ingredients.
Pour into baked pie shell. Beat egg whites.
Add remaining sugar.
Spread on top. Bake until lightly browned.
