Beef-Zucchini Casserole - cooking recipe
Ingredients

3 to 4 medium to small zucchini (can mix with yellow squash if desired)
1/2 onion, chopped
2 Tbsp. butter
1 lb. ground beef
1/2 c. cracker crumbs or bread crumbs
1 tsp. salt
1/8 tsp. pepper
1/4 tsp. oregano
1/2 c. butter
1/4 c. flour
1 tsp. salt
1/4 tsp. pepper
2 c. milk
1 1/2 c. (6 oz.) shredded Cheddar (sharp)
Preparation

Cut off ends of zucchini/squash and cook whole in lightly salted water until crisp-tender.
Drain and cut into 1/2-inch slices.
Saute onion in butter (2 tablespoons), add beef and brown lightly.
Pour off fat.
Stir in crumbs, salt, pepper and oregano.
