Golden Harvest Muffins - cooking recipe

Ingredients
    2 c. flour
    2 c. whole wheat yeast
    2 c. sugar
    4 tsp. baking soda
    4 tsp. cinnamon
    1 tsp. salt
    1/2 tsp. cloves
    4 c. (5 medium) shredded peeled apples
    1 c. shredded carrots
    1 c. shredded coconut
    1 c. raisins
    1 c. chopped walnuts or pecans
    1 1/2 c. oil (can substitute 1/2 oil for applesauce)
    1/2 c. milk
    4 tsp. vanilla
    3 beaten eggs
Preparation
    Heat oven to 350\u00b0.
    Line 36 muffin cups with paper cup or grease bottoms only.
    Lightly spoon flour into measuring cup; level off.
    In a 4-quart bowl, combine all dry ingredients and walnuts; mix well.
    Add oil, milk, vanilla and eggs.
    Stir just until moistened.
    Fill lined cups 3/4 full.
    Bake for 20 to 25 minutes or until toothpick inserted in the center comes out clean. Immediately remove from pans.
    Makes 36.
