Dark Fruit Cake - cooking recipe
Ingredients

1 lb. shortening
1 lb. brown sugar
1 lb. pastry flour
10 eggs
1 Tbsp. cinnamon
1 Tbsp. nutmeg
1 Tbsp. allspice
1 tsp. soda
1 c. strawberry jam
3 lb. raisins
1 lb. currants
1 lb. dates
3/4 lb. candied cherries
3/4 lb. candied pineapple
1/2 lb. citron
1/4 lb. orange peel
1/4 lb. lemon peel
1/4 lb. pecans
1/4 lb. English walnuts
1 pkg. figs (if desired)
Preparation

Cream shortening and sugar.
Add beaten egg yolks.
Gradually add the jam.
(Use a little flour to dredge the fruit.)
Mix soda, cinnamon, nutmeg and allspice with remaining flour and add alternately with the beaten egg whites.
Add the fruit and nuts. Bake in deep, well greased pan or pans in slow oven (250\u00b0) about 5 to 6 hours.
(I let my cake stand overnight in the mixing bowl.) Before baking, place a pan of water on rack under where the cake is baking.
Be sure not to let it bake dry.
Makes about 12 pounds cake.
