Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    2 eggs
    1 c. milk
    1/2 tsp. salt
    pepper to taste
    1/2 c. bread or cracker crumbs
    1 c. cheese
    2 Tbsp. butter
Preparation
    Peel and slice eggplant.
    Cook in small amount of water until soft.
    Combine beaten eggs, milk, salt and pepper.
    Add alternate layers of eggplant, milk, mixture, crumbs, grated cheese and butter in greased casserole dish.
    Bake at 350\u00b0 for 20 minutes or until set.
