Baked Eggplant - cooking recipe

Ingredients

1 medium eggplant
2 eggs, well beaten
1 c. cornflakes
salt and pepper

Preparation

Parboil eggplant until tender and mash through colander. Beat.
Add other ingredients and bake after sprinkling top generously with cheese. Bake in a 350\u00b0 oven for 1/2 hour.
