Alligator Sauce Picante(A Great Cook Ahead Appetizer Or Party Food) - cooking recipe

Ingredients
    2 lb. alligator meat (young gator, best)
    1 medium bell pepper, chopped
    2 yellow onions, chopped
    3 toes garlic, chopped
    1 small bunch parsley, chopped (no stems)
    1/2 c. chopped celery
    1/2 c. flour
    1/2 c. cooking oil
    1 large can tomato paste or 2 small cans
    water
    approximately 2 to 3 lb. sausage (smoked, andouille, hot)
    salt to taste
    1 Tbsp. black pepper
    1 Tbsp. red (cayenne) pepper
Preparation
    May wish to add peppers in 1/2 teaspoon amounts and taste, adjust to your own tongue tolerance.
