Mel'S South Point Soup - cooking recipe

Ingredients
    2 cloves fresh garlic
    1 inch fresh ginger
    1/4 c. oil
    1/2 onion
    4 pork chops or chicken thighs, skinned
    1 Chinese cabbage and/or 1 bunch watercress
    2 to 3 qt. water
    1/4 to 1/2 c. oyster sauce
    1 lb. block tofu
    1 tsp. pepper
Preparation
    Heat oil in a large pot.
    Add minced garlic, sliced ginger and chopped onion.
    Cook until onion is wilted.
    Add whole pork chops and cook until brown.
    Pour in water and oyster sauce; simmer until pork chops are tender.
    Chop cabbage and watercress into 2 to 3-inch pieces.
    Add stems of cabbage and cook 5 minutes at slow boil.
    Add remainder of cabbage and watercress.
    Simmer until soft.
    Season with pepper.
    Add tofu cut into cubes and turn off fire.
