Pear Relish - cooking recipe

Ingredients
    1 gal. pears
    9 red bell peppers
    6 hot green peppers
    1/2 gal. onions
    1/2 to 3/4 c. salt
    4 c. sugar
    1 tsp. dry mustard
    3 tsp. turmeric
    1 tsp. mustard seed
    1 gal. vinegar
Preparation
    Chop pears, peppers and onions.
    Mix together, then add salt. Let stand 1 hour.
    Drain.
    Then add rest of ingredients.
    Simmer 1 hour.
    Put up in sterilized jars.
