Pickled Beets - cooking recipe

Ingredients
    1 lb. fresh beets
    1 c. water
    1/2 c. vinegar
    1 c. sugar
    1 stick cinnamon
Preparation
    Cook beets in 1-inch boiling, salted water for 30 to 45 minutes.
    Drain and cool.
    Peel and quarter beets.
    Combine water, vinegar, sugar and cinnamon in saucepan.
    Bring to a boil and pour over beets.
    Marinate several hours or overnight in refrigerator. Pour off part of liquid before serving.
    Yields 2 cups.
