Low Tide Chicken - cooking recipe
Ingredients

1/2 c. pure olive oil
1/2 garlic clove (if you don't like garlic, use 1/4)
6 boneless chicken breasts
1 1/2 c. water
4 chicken bouillon cubes
1 tsp. thyme
1/4 tsp. salt
pepper to taste
1 lb. fresh mushrooms
1 pkg. fresh spinach
Preparation

Heat olive oil in a large skillet.
Saute garlic in oil. Flour chicken and lightly fry, then place in a roasting pan. Strain oil, saving approximately 1/4 cup.
Pour oil back into pan and add the water, bouillon cubes, thyme, salt and pepper.
Cook on high heat until water has almost boiled away.
Then add mushrooms.
Saute over a low flame for 10 minutes.
Cook spinach until done, and drain, then put over chicken.
Pour mushrooms and sauce over chicken.
Place chicken in oven at 350\u00b0 for 10 minutes and serve over rice.
It will look like low tide on the beach if done correctly!
