Mushrooms With Tomatoes(Funghi Con Pomodori) - cooking recipe

Ingredients
    1 lb. mushrooms
    2 cloves garlic
    4 Tbsp. olive oil
    10 oz. chopped tomatoes
    salt and pepper to taste
    1/4 tsp. red pepper
    3 parsley sprigs
Preparation
    Wash
    mushrooms
    thoroughly.
    Cut
    in
    half and bring 1 quart of salted water to a boil.
    Boil mushrooms about 3 to 4 minutes. Saute garlic in oil until brown.
    Discard garlic and saute mushrooms
    for
    about
    10 minutes.
    Add tomatoes, salt, pepper, hot pepper and parsley.
    Cook an additional 30 minutes on medium low heat.
    Makes 4 servings.
