Zucchini Carrot Bread - cooking recipe

Ingredients
    2 eggs
    3/4 c. oil
    1 c. zucchini, unpeeled and grated
    1 c. carrot, grated
    1 tsp. vanilla
    1/2 c. pecans or walnuts, chopped
    1 3/4 c. flour
    1/2 tsp. salt
    1/2 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. cinnamon
Preparation
    In a large bowl, beat eggs until foamy.
    Add sugar and oil, then stir in zucchini, carrots and vanilla.
    In a separate bowl, combine flour, salt, baking powder, soda and cinnamon.
    Add to zucchini and carrot mixture and stir in until well blended.
    Add nuts.
    Place in a greased and floured 9 x 5 x 3-inch loaf pan and bake at 350\u00b0 for 1 hour and 10 minutes or until done.
