Beef Barbecue - cooking recipe

Ingredients
    4 to 5 lb. chuck roast
    3 onions
    2 (16 oz.) cans crushed tomatoes
    1 c. vinegar
    1 c. sugar
    5 tsp. sugar
    2 tsp. salt
Preparation
    Simmer,
    covered,
    until
    thick and meat falls apart (2 hours).
    Cook
    uncover
    last
    3
    hours.
    After simmering for 2 hours,
    I
    usually\ttake
    two forks and sort of shred the meat apart,
    so\tthat it gets kind of stringy.
    Sometimes I cut the meat
    into\tlarge chunks, and take one chunk at a time and put it on\ta plate and shred it.
    After I shred each chunk, I put it back
    in
    the
    pot and shred another chunk, until it's all shredded;
    then
    let
    it simmer for the remaining 3 hours.\tIt will
    thicken
    as
    it
    simmers.
    (It makes a lot and it can be frozen.)
