Eggplant - cooking recipe
Ingredients

1 medium eggplant
1 can mushroom soup (no water)
1 egg
4 cheese slices
crushed crackers
1 stick margarine
1 onion
1 sweet pepper
Preparation

Slice eggplant, salt well and peel.
Let stand in salt with enough water to cover for 15 minutes.
Rinse.
Salt again; let stand for 10 minutes.
Rinse, cook until done.
Beat egg; add mushroom soup and beat.
Add eggplant (about 1 cup); add onion and pepper.
Salt and pepper to taste.
Put into baking dish, cover with cheese slices.
Bake at 350\u00b0 until cheese melts.
Cover with crushed crackers, then cover with butter.
Bake at 350\u00b0 for 30 minutes.
