Mexican Pork Chops - cooking recipe

Ingredients
    4 pork chops (1-inch thick)
    1 tsp. salt
    1/8 tsp. pepper
    1 medium green pepper, cut into rings
    4 Tbsp. uncooked instant rice
    1 can Mexican style stewed tomatoes (about 16 oz.)
Preparation
    Cook pork chops over medium heat until brown.
    Season with salt and pepper.
    Top each chop with green pepper ring.
    Fill each ring with 1 tablespoon rice.
    Carefully pour 1/4 cup stewed tomatoes on rice in each ring.
    Pour remaining tomatoes into skillet.
    Cover tightly; simmer 1 hour or until done.
    Add small amount of water if necessary.
    Serves 4.
