Tarragon Chicken - cooking recipe

Ingredients
    1 (2-2 1/2 Lb.) split chicken
    salt and pepper to taste
    2 Tbsp. butter
    2 Tbsp. finely chopped onion
    1 clove garlic, crushed
    2 tsp. fresh or 1 tsp. dry tarragon
    1/2 Cup dry white wine
    1/4 Cup water
Preparation
    Sprinkle chicken with salt and pepper. Heat butter in skillet large enough to hold chicken. Add chicken, skin-side down. cook 10 minutes until brown on skin side. Turn and cook 5 minutes. Remove and set aside. In skillet, add onion and garlic - cook briefly. Add tarragon and wine. Stir well. Add water. Return chicken to pan; cover. cook 20 minutes. Serve on Rice.
