Diabetic Beef Burgundy - cooking recipe

Ingredients
    3/4 lb. beef round, well trimmed, cut in 1-inch cubes
    1/2 tsp. salt
    1/8 tsp. pepper
    1 bay leaf
    1/8 tsp. thyme leaves
    1 1/2 c. water
    1 1/2 c. diced potatoes
    1 c. carrots
    1/2 c. celery
    1/3 c. chopped onion
    3 Tbsp. flour
    1/4 c. water
    parsley to garnish
Preparation
    Brown beef in hot frypan.
    Add salt, pepper, bay leaf, thyme and 1 1/2 cups water.
    Simmer, covered, about 1 3/4 hours.
    Remove bay leaf.
    Add potatoes, carrots, celery and onion.
    Simmer, covered, until tender, about 20 minutes.
    Mix flour with 1/4 cup water until smooth.
    Add slowly to meat mixture, stirring, gently. Cook until thickened.
    Garnish with parsley.
