Red Beans And Rice - cooking recipe

Ingredients
    2 lb. pinto beans
    2 tsp. salt
    1/2 c. margarine or bacon fat
    3 c. cooked rice
    1 raw onion, diced
Preparation
    Clean the beans of any rocks or bad beans.
    Rinse.
    Put in large pot and cover with 4 to 5 inches of water.
    Place over heat; bring to boil.
    Reduce heat to low simmer.
    Cook 2 hours.
    Add salt and margarine.
    Continue cooking 30 minutes to 1 hour until beans are tender.
