Cocoa-Banana Muffinettes - cooking recipe

Ingredients
    1 1/4 c. all-purpose flour
    1 c. Quaker oats (uncooked)
    1/2 c. firmly packed brown sugar
    1/3 c. unsweetened cocoa
    1 Tbsp. baking powder
    1/4 tsp. baking soda
    2/3 c. mashed ripe bananas (about 2 small)
    1/2 c. milk
    1/3 c. (5 1/3 Tbsp.) margarine, melted
    2 egg whites, slightly beaten
    1 tsp. vanilla
    powdered sugar (optional)
Preparation
    Heat oven to 400\u00b0.
    Line 30 miniature muffin cups with paper baking cups or spray bottoms only with nonstick cooking spray. Combine the first 6 ingredients; mix well.
    Add combined bananas, milk, margarine, egg whites and vanilla, mixing just until moistened.
    Fill prepared cups almost full.
    Bake for 10 to 12 minutes, or until wooden pick inserted in center comes out clean. Let muffins stand a few minutes; remove from pan.
    Cool; sprinkle with powdered sugar.
    Yields 2 1/2 dozen.
