Crunchy Chicken Casserole - cooking recipe
Ingredients

2 large carrots, sliced and peeled
8 oz. mild Cheddar cheese, shredded
1/4 c. butter
1/4 c. flour
1 (10 3/4 oz.) can Campbell's chicken broth
4 c. diced, cooked chicken
1 (2 oz.) jar pimentos (optional)
Preparation

Cook carrots until not quite tender.
Set carrots and chicken aside.
In saucepan over medium heat melt butter.
Stir in flour until smooth.
Add broth, stirring constantly until mixture thickens.
Lower heat and add shredded cheese until melted. Remove from heat.
Stir in carrots, cooked chicken and pimentos. Spread in shallow 2-quart casserole dish (can also use oblong baking dish).
