Fried Mallard - cooking recipe

Ingredients
    4 mallards (breast only)
    1 qt. milk
    1 c. milk
    1 egg, beaten
    1 Tbsp. salt
    1 Tbsp. pepper
    1 c. flour
    1/2 qt. vegetable oil
Preparation
    Remove breast from ducks and chop into pieces.
    Marinate in 1 quart milk for 3 1/2 hours.
    Remove.
    Mix together 1 cup fresh milk, egg, salt and pepper.
    Dip duck into milk mixture and then roll in flour.
    Preheat vegetable oil and fry at medium temperature until brown.
    Serves 6.
