Lemon Butter - cooking recipe

Ingredients
    1 lemon (grated rind and juice)
    1 1/2 c. sugar
    3/4 c. water
    2 eggs, well beaten
    big lump of butter
Preparation
    Mix ingredients together and bring to a boil, stirring constantly.
    If not thick enough, add 1 tablespoon of cornstarch mixed in water and continue stirring until thick.
    Refrigerate.
    A good spread for toast, nut bread, etc.
