Pineapple Carrot Muffins - cooking recipe
Ingredients

4 c. flour
1 c. brown sugar
1 1/2 c. sugar
4 tsp. baking soda
4 tsp. cinnamon
1 tsp. mace
1 tsp. salt
1 lb. carrots, peeled and grated
1 (15 to 20 oz.) can crushed pineapple, drained
6 eggs, beaten
1 c. vegetable oil
4 tsp. vanilla
1 c. pecans, chopped
Preparation

Preheat oven to 350\u00b0.
In mixing bowl, mix sifted flour, sugar, baking soda, cinnamon, mace, salt and sugars.
Add carrots, tossing to coat.
In mixing bowl, combine pineapple, eggs, oil and vanilla.
Pour into original ingredients, stirring to blend. Bake 25 to 30 minutes. Cool at least 10 minutes.
