Potato Latkas (Pancakes) - cooking recipe

Ingredients
    1 large Russet or Idaho potato per person
    1 Tbsp. flour per potato
    1 Tbsp. grated onion per potato
    1 egg per 3 potatoes
    salt and pepper to taste
    oil to fry
Preparation
    Shred potatoes and mix remaining ingredients.
    Cook on hot griddle until browned.
    Good with smoked sausage, homemade applesauce and slaw.
