Nutty Meat Loaf(Diabetic - Meat) - cooking recipe
Ingredients

1 lb. lean ground beef
1/4 c. onion, chopped
2 Tbsp. green pepper, chopped
2 Tbsp. celery, chopped
1/2 tsp. dry mustard
1/2 tsp. Worcestershire sauce
30 peanuts, chopped
1/2 c. fine bread crumbs
1 egg
1/4 c. skim milk
1 (8 oz.) can tomato juice, divided in half
Preparation

Mix ingredients, using half of the tomato juice.
Shape meat loaf and place in pan.
Pour remaining tomato juice on top.
Bake at 350\u00b0 for 1 hour.
Yields 6 servings.
