Diabetic Rice Pudding - cooking recipe

Ingredients
    1 c. Minute rice
    3 Tbsp. raisins
    2 c. milk
    1/8 tsp. nutmeg
    1 c. water
    1/4 tsp. salt
    1 (3 3/4 oz.) pkg. vanilla or lemon instant pudding
Preparation
    Combine rice, water, raisins and salt in pan. Bring to a boil. Cover and remove from heat.
    Let stand until cool.
    Pour milk into bowl and add pudding mix and nutmeg.
    Beat until blended, about 2 minutes.
    Stir cooled rice into pudding.
    Chill before serving.
    Can bake at 300\u00b0 until pudding browns on top. Taste pudding, if not sweet enough to your taste, add 12 packages Equal.
