Beef Provencale - cooking recipe

Ingredients
    1 1/2 lb. center cut beef tenderloin
    2 Tbsp. butter
    1 1/2 tsp. salt
    pepper
    1/4 c. water
    10 potatoes, thinly sliced and peeled
    6 Tbsp. butter (room temperature)
    1 or 2 minced garlic cloves
    3 Tbsp. finely chopped parsley
Preparation
    Trim excess fat off meat.
    Remove tendon.
    Heat butter in skillet, brown meat well on all sides.
    Sprinkle with 1/2 of salt and pepper.
    Reduce heat.
    Cover and cook for 10 minutes.
    Turn meat once during cooking.
    Remove meat from skillet and wrap tightly in foil.
    Add water to pan.
    Heat.
    Scrape up brownings. Strain juices.
