Southern Chicken And Dumplings - cooking recipe

Ingredients
    1 (4 to 5 lb.) hen
    about 12 c. water
    1 tsp. salt
    2 c. plain flour
    2 tsp. baking powder
    1 tsp. salt
    1/3 c. shortening
    1/2 c. milk
Preparation
    Place hen, water and salt in a large pot.
    Bring to a boil, reduce heat and simmer slowly until chicken is tender.
    Remove chicken from broth.
    Cool; cut into pieces.
    To make dumplings, sift flour, baking powder and salt together.
    Cut in shortening. Add milk to make a stiff dough.
    I sometimes use 1/4 cup milk and 1/4 cup broth.
    Roll out thin and cut into squares or strips. Sprinkle lightly with flour and drop into boiling chicken broth. Cover and boil gently for 30 to 40 minutes.
    Add cut chicken pieces before serving.
