Beets In Ginger Vinaigrette - cooking recipe
Ingredients

2 (14 oz.) cans whole beets
3 scallions
2 Tbsp. vinegar, preferably balsamic
1 1/2 tsp. minced, fresh ginger
1 clove garlic, minced
1 tsp. grated lemon zest
1 tsp. lemon juice
1 tsp. honey
1 tsp. salt
1/4 tsp. pepper
1/4 c. oil (preferably olive)
3/4 lb. mixed baby lettuce greens
Preparation

Drain and quarter beets. Slice scallions. In medium bowl, stir together vinegar, ginger, garlic, lemon zest and juice, honey, salt and pepper until salt dissolves. Gradually beat in oil until mixture thickens. In large bowl, combine lettuce greens with half of dressing. Transfer to platter.
In same bowl, combine beets, scallions and remaining dressing. Serve over greens.
