Southern Fried Catfish - cooking recipe

Ingredients
    1/2 c. yellow cornmeal
    1 tsp. salt
    1/8 tsp. red pepper
    1/8 tsp. black pepper
    1 lb. catfish fillets
    salad oil
Preparation
    In pie plate or shallow dish, combine cornmeal, salt and peppers.
    Dredge fish pieces in cornmeal mixture, patting to coat on all sides.
    In a large, heavy skillet, heat about 1/2 inch of oil to 375\u00b0 or until a small piece of bread sizzles when dropped in.
    Add fish fillets and fry until golden brown, about 4 minutes on each side.
    Drain on paper towels.
