Wok Vegetable Casserole - cooking recipe
Ingredients

2 Tbsp. oil
1 large onion, cut in large pieces
1 bunch broccoli, broken into flowerets
1 yellow bell pepper, sliced
2 to 3 zucchini squash, sliced
1 can kidney beans, drained
8 oz. Mozzarella cheese, cubed
4 oz. Monterey Jack cheese with jalapenos, cubed
Preparation

Heat oil in wok or large skillet.
Lightly stir-fry vegetables. Add in order.
Add kidney beans and heat through.
Season to taste with salt and oregano.
Top vegetables with cheeses.
Cover to allow cheese to melt.
Serve from wok immediately
