Baked Catfish - cooking recipe
Ingredients

1/4 c. cornmeal
1/4 c. flour
1/4 c. grated Parmesan cheese
1 tsp. paprika
1/2 tsp. salt
1/2 tsp. black pepper
1/8 tsp. red pepper
1 egg white
2 Tbsp. skim milk
4 (4 oz.) catfish fillets
cooking spray (Pam)
Preparation

Combine first 7 ingredients; set aside.
Whisk together egg white and milk.
Dip fillets in milk mixture, then in dry mixture. Place on foil lined baking sheet that has been sprayed with Pam.
A few sesame seed can be sprinkled on the fish fillets before spraying, if desired.
Bake at 350\u00b0 for 30 minutes or until fish flakes easily when tested with fork.
