Orange Sweet Potatoes - cooking recipe

Ingredients
    2 (16 oz.) cans yams
    1/2 c. dark brown sugar
    2 Tbsp. butter
    1/2 to 3/4 c. orange juice
    1 1/2 Tbsp. cornstarch
    2 Tbsp. butter
    1/2 c. sugar
    2 tsp. grated orange rind
    chopped pecans or white raisins (optional)
Preparation
    If using whole yams, cut in half and arrange in an oblong 2-quart baking dish.
    In a saucepan, mix together cornstarch, sugars and grated orange rind. Gradually stir in orange juice, keeping smooth. Add butter. Cook over moderate heat, stirring constantly, until boiling and thickened.
    Pour over yams.
    Bake in a preheated 350\u00b0 oven for 30 minutes or until bubbly hot. Sprinkle marshmallows over top when finished baking.
    Let heat melt marshmallows or return to oven for a few minutes to brown. Makes 12 servings.
