Meatless Chili - cooking recipe
Ingredients

2 c. chopped celery
4 c. chopped onion
3 garlic cloves, chopped
8 c. unsalted tomatoes, canned, fresh or frozen
2 1/2 c. dried kidney beans, rinsed and sorted or 6 1/4 c. cooked kidney beans
2 1/2 c. dried pinto beans or 6 1/4 c. cooked pinto beans
1 c. chopped fresh parsley
1/4 c. unsalted tomato paste
1 Tbsp. vegetable oil
1 to 3 tsp. chili powder
1 tsp. pepper
10 c. water
3 c. uncooked brown rice
Preparation

Combine all ingredients, except rice, in an 8-quart stock pot. Bring to a boil.
Reduce to medium heat and cook, partially covered, for 3 to 3 1/2 hours, stirring occasionally.
