Onion Relish - cooking recipe

Ingredients
    2 lb. large sweet onions, chopped
    2 stalks celery, sliced
    1 sweet red pepper, chopped
    1 Tbsp. butter or margarine, melted
    3/4 c. cider vinegar
    1/4 c. water
    2 Tbsp. brown sugar
    1 tsp. celery seed
    1/4 tsp. salt
Preparation
    Saute onions, celery and red pepper in butter in a small Dutch oven for 15 minutes, or until tender.
    Add vinegar and the remaining ingredients to the mixture.
    Bring to a boil, reduce heat and simmer, uncovered, for 20 minutes.
    Store in refrigerator. Serve chilled or at room temperature.
    Yields 1 quart.
