Watercress Salad - cooking recipe

Ingredients
    2 bunches watercress
    2 small green onions
    1/4 tsp. pepper
    3/4 tsp. salt (optional)
    1 1/2 tsp. sugar
    2 Tbsp. soy sauce
    1 1/2 Tbsp. vinegar
    1 dried crushed red chile
    1 tsp. crushed toasted sesame seed (optional)
Preparation
    Wash, drain and cut watercress into 2 inch lengths.
    Mix together the next 7 ingredients.
    Pour over the watercress, then sprinkle with sesame seed.
    Chill for 1 hour but serve at room temperature.
