Microwave Lemon Pie Filling - cooking recipe

Ingredients
    3 egg yolks
    1 1/2 c. water
    1 1/2 c. sugar
    7 Tbsp. cornstarch
    1/8 tsp. salt
    2 drops yellow food coloring
    3 Tbsp. butter
    2 tsp. lemon peel
    1/4 to 1/2 c. lemon juice
Preparation
    Heat
    water

    3
    minutes\tuntil simmering.
    Blend together
    sugar,
    cornstarch,
    salt and food coloring.
    Add to water
    slowly, stirring.
    Cook, uncovered, 4 minutes, stirring after every
    minute.
    Beat egg yolks;
    add small amount of hot mixture
    to
    yolks,
    stirring well.
    Add yolks to hot mixture. Cook,
    uncovered, for 1 minute.
    Stir well.
    Add butter, lemon peel and juice; stir in well.
    Cool.
    Serve on angel food cake with Cool Whip or as pie filling.
