Country Breakfast Potatoes - cooking recipe

Ingredients
    2 Tbsp. green bell pepper, chopped
    1/4 c. onion, chopped
    1 Tbsp. butter or margarine
    1/2 c. diced cooked ham
    4 eggs, beaten with 2 Tbsp. water
    1/4 c. shredded Cheddar cheese
    4 baked potatoes
Preparation
    In medium skillet, cook green pepper and onion in butter over medium-low heat until tender. Add ham and eggs. Cook until eggs begin to set on bottom and sides. Lift and fold eggs to allow uncooked portion to set. Continue cooking until eggs are soft scrambled.
    Season with salt and pepper. Spoon eggs over each potato. Sprinkle 1 tablespoon cheese over each.
