Fish Fillets On Spinach - cooking recipe
Ingredients

1 1/2 lb. haddock, skinless
juice of 1 lemon
1 lb. fresh spinach
2 Tbsp. vegetable oil
1 medium onion, chopped
1 tsp. butter or margarine
1/2 tsp. salt
1/8 tsp. pepper
2 tomatoes, peeled and sliced
1/2 c. grated Mozzarella
Preparation

Wash fish; pat dry.
Sprinkle with lemon juice and let stand for 10 minutes.
Wash spinach well.
Chop coarsely.
Heat oil in frypan.
Add onion; saute until soft.
Fry fish in pan with onions a few minutes on each side until golden brown.
Remove fish and onions; reserve.
Add spinach to frypan and stir-fry 4 to 5 minutes.
Grease casserole dish with butter; add spinach.
Arrange fish on spinach; sprinkle with salt and pepper.
Place tomatoes on fish and sprinkle with cheese.
Bake at 350\u00b0 for 15 to 20 minutes. Great!
