Zucchini Boats - cooking recipe

Ingredients
    2 medium zucchini squash
    1 medium ripe tomato, chopped (peeled if desired)
    1 c. seasoned croutons
    1/2 tsp. chopped fresh basil
    1/4 tsp. fresh thyme
    1/4 c. fresh grated Parmesan cheese
    salt and pepper
Preparation
    Steam zucchini until tender (approximately 4 minutes).
    Halve lengthwise and hollow out pulp to form boats, reserving pulp. Spray skillet with vegetable spray.
    Combine pulp, tomato, basil and thyme and cook over medium heat about 3 minutes.
    Add croutons to absorb liquid, then salt and pepper to taste.
    Fill boats with mixture; top with cheese.
    Broil until cheese is bubbly.
    Serve immediately.
