Ingredients

1 (16 oz.) can sliced beets
1/4 c. sugar
1 heaping tsp. cornstarch
1/2 tsp. salt
1/8 tsp. pepper
1/4 c. vinegar
1/4 c. thin onion, sliced
Preparation

Drain beets and save juice.
Combine beet juice and water to make 1 cup liquid.
In a 1-quart glass bowl, combine sugar, cornstarch, vinegar, salt and pepper.
Stir in beet liquid.
Cook for 3 minutes in microwave.
Add beets; stir and cook an additional 5 minutes.
