Eggplant "Sandwich" Casserole* - cooking recipe
Ingredients

1 eggplant
1 lb. ground beef
1/4 c. grated Parmesan cheese
1/4 tsp. pepper
1/4 tsp. m.s.g.
1/2 tsp. salt
2 eggs
2 small cans tomato sauce
salt and pepper
oregano
Swiss or Mozzarella cheese
1/4 tsp. oregano
Preparation

Wash and slice eggplant 1/4 inch thick (unpeeled).
Make sandwich style a slice of eggplant, meat mixture patty and another slice of eggplant.
Patties made of beef, onion, Parmesan cheese, pepper, m.s.g., oregano, salt and eggs.
Brown both sides of your eggplant \"sandwich\" in small amount of fat, placing browned eggplant sandwiches into casserole dish, fitting as close together as you can.
Mix tomato sauce and 1 can water, salt, pepper, oregano (to taste) and pour over \"sandwiches.\"
Place Swiss or Mozzarella cheese slices on top and bake 1 hour at 325\u00b0.
