Spanish Hominy - cooking recipe

Ingredients
    2 c. golden hominy, drained
    1 c. whole tomatoes, crushed
    1 small-medium onion, diced
    1 bell pepper, diced
    2 Tbsp. cooking oil
    salt and pepper to taste
Preparation
    In a large skillet heat cooking oil.
    Saute onion and bell pepper until tender.
    Add hominy and tomatoes.
    Cover and simmer for approximately 45 minutes over low heat, stirring occasionally.
