Cream Of Mushroom Soup - cooking recipe

Ingredients
    1 lb. fresh mushrooms, cleaned and sliced
    1 medium onion, chopped
    1/4 c. plus 2 Tbsp. margarine
    1/4 c. all-purpose flour
    3 c. chicken broth
    2 c. half and half
    1 tsp. salt
    1/4 tsp. pepper
    1/2 c. sherry
Preparation
    Saute mushrooms and onion in butter in a heavy saucepan over low heat for 10 minutes.
    Add flour; stir until smooth.
    Cook 1 minute, stirring constantly.
    Gradually add broth; cook over medium heat, stirring constantly, until thickened and bubbly.
    Reduce to low heat.
    Add remaining ingredients.
    Cook just until thoroughly blended.
    Serve immediately with crisp wheat or French bread.
