Apple Rings From Large Cucumbers - cooking recipe

Ingredients
    2 gal. cucumbers, sliced with rind and seeds removed to make circles or rings
    2 c. lime
    8 1/2 qt. water
    1 c. brown sugar
    1 oz. red food coloring
    1 Tbsp. alum
    water to cover
    2 1/2 c. vinegar
    2 1/2 c. water
    3/4 c. red hots
    6 sticks cinnamon
    12 1/2 c. sugar (5 lb.)
Preparation
    Mix first three ingredients.
    Let stand 24 hours.
    Drain; wash well and let stand in cold water for 3 hours.
    Mix next 4 ingredients and pour over cukes.
    Simmer for 2 hours.
    Drain.
    Mix next 5 ingredients and bring to boil.
    Pour over cukes for 3 days. Each day reheating syrup to a boil.
    On third day, put cukes into jars; heat syrup and pour over them.
    Seal.
    Makes 7 pints.
    Store in refrigerator and use as pickles.
