Low-Fat Mexican Plate - cooking recipe
Ingredients

1 bag Baked (fat free) Tortilla Chips
1 can fat-free refried beans
shredded lettuce
diced tomatoes
1/2 lb very lean ground beef
1 pkg fat-free shredded cheddar or monterey jack cheese
light or fat-free ranch dressing
Preparation

Saute the ground beef, then place in colander and rinse well under very hot water.
Drain and keep hot.
Meanwhile, heat the beans in a small saucepan (caution: mixture is very thick and will burn easily; you may have to thin it with water).
Cover a platter with large tortilla chips and warm in microwave.
Drizzle the chips with the hot bean mixture and ground beef.
Add shredded lettuce, tomatoes and cheese.
Sprinkle lightly with ranch dressing, serve immediately.
