Passover Zucchini And Carrot Latkes * - cooking recipe

Ingredients
    2 medium zucchini, shredded
    3 Tbsp. matzo meal
    6 Tbsp. matzo cake meal
    4 large eggs or 2 eggs and 4 egg whites, well beaten
    1/2 tsp. salt
    pinch of pepper
    2 cloves garlic, minced or 1/4 tsp. garlic powder
    oil (for frying)
    2 medium shredded carrots
Preparation
    Combine all ingredients, mixing well.
    Drop by tablespoonfuls into hot oil in a skillet and fry on both sides until golden brown.
    Yields 10 to 12 latkes.
