Rice Pudding - cooking recipe

Ingredients
    1/2 c. water
    1/2 c. uncooked instant rice
    3 eggs, slightly beaten
    1/2 c. sugar
    2 tsp. salt
    2 1/2 c. milk, scalded
    cinnamon (if desired)
Preparation
    Heat oven to 350\u00b0.
    Heat water to boiling.
    Remove from heat; stir in rice.
    Cover and let stand for 5 minutes.
    Blend eggs, sugar, vanilla and salt.
    Gradually stir in milk.
    Sprinkle rice mixture with cinnamon.
    Pour very hot water 1 1/4-inches deep into pan.
    Bake pudding about 70 minutes until knife inserted comes out clean.
    Remove casserole from water.
    Serve pudding warm or cool.
