Orange Corn Muffins - cooking recipe

3/4 c. milk
1/4 c. oil
1 c. cornmeal
1/4 c. honey
1/2 tsp. salt
1 egg
1 1/2 tsp. orange peel, freshly grated
1 c. whole wheat flour
1 Tbsp. baking powder
1/4 c. sugar (for top; optional)
Preparation

Beat together the milk, egg, oil, honey and 1 teaspoon orange peel.
Add to combined cornmeal, flour, baking powder and salt, mixing just until dry ingredients are moistened.* Fill 12 greased or paper lined medium size muffin cups 2/3 full.** Sprinkle combined remaining peel and sugar evenly over batter.
Bake at 425\u00b0 for about 15 minutes.
Makes 1 dozen.
